I made 9 *LARGE* cupcakes this afternoon for use on Easter. I needed to make em now since I have no clue how the next few weeks will be going job wise etc.

So now I need to freeze them.

Will I have to thaw them completely before decorating them?
Or can I frost/decorate them with Buttercream with them still frozen?
If I do will the frosting then get icky or even fall off as they thaw?

TIA!

You can decorate them while frozen, but remember to put them back in the fridge until they thaw or the icing will weep and run a bit, especially if it's colored. If I were you, I'd probably put them in the fridge the night before you plan to decorate them and then put them on the counter first thing in the morning to let them come to room temperature before you decorate them. But, like I said, decorating them frozen is fine, just keep cool until the cupcakes thaw completely to keep your colors from running.

I remember when I worked at a bakery we would always thaw cakes pror to decorating them. On very rare occations we would decorate a cake and then have to freeze it. The danger with doing this is that some of the icing might run when thawed, fade or appear discolored, and on occations the icing would crack and not be "pretty" to look at.

I agree with Step about pulling them out the day or night before and then frosting them.

Hope this helps!
