Duck Egg Salad

They were a total pain to peel but probably made the best creamiest egg salad I've ever eaten. Of course there was so much yolk it would be darn hard not to make creamy egg salad. I'm definitely using duck eggs for alllllllll my egg salad sandwiches from now on.

I took my egg slada to work to share with a couple coworkers. One had brought an egg salad sandwich from home and comparing them just made hers look gross.

I think I hear duck egg salad calling me!

The sandwich is way worth the extra work in peeling.
If you are very patient, devilled duck and goose eggs are yummy, too and quite a conversation piece at gatherings!

My neighbor says they are tooooo rich for him to eat straight. I use 1/2 chicken 1/2 duck for the BEST scrambled eggs or omelets. Pure duck can just be to much sometimes.
