Dutch Baby AKA German Pacake--easy & delicious oven pancake/popover

I just looked back at this thread for the first time in a couple of years! Glad it has been useful to some folks!

Yes, I think this makes one serving, but I'm a man about six feet tall and 200 pounds, so you might think otherwise. I also tend to just make this with no bacon or anything, and I like a nice, filling breakfast, since I only get to make it occasionally. I think of it as an easy, one dish meal. It's only 3 eggs and a half cup of flour and a little milk, so it's not really much when you think of it. My mother would probably split this with somebody, though.

I will have to try it with nutmeg, but I usually do the sweet-and-sour thing by using maple syrup and lemon juice, so I'm not sure the lemon/nutmeg mixture will be the best. I may have to skip the lemon.

The great thing about this dish is that it is so simple but your guests will think it's something incredibly impressive when you serve it to them, especially if you make an individual one for each person. It's almost like you made them a personal-sized souffle or something. You don't have to tell them it's dead simple and almost foolproof!
 
I like to make this in a skillet. First I add butter and saute pears or apples. Once they are softened I pour the batter over and then put in the oven. MMM..
 
That sounds just like what my family calls a German Apple Pancake. And you're right, it's pretty much the same thing.

If I'm making one large dutch baby, I sometimes do use my 22 inch cast iron skillet. It's an impressive sight when it comes out!
