I have only 3 breeds who lay eggs true to their earlobe color. I heard somewhere that their earlobe color determines their egg color, but it hasn't really been true. My olive egger never lays even black eggs. My Americanas (gone) never layed anything but brown. Is this earlobe thing even true?

Genetically, earlobe color and egg color have nothing to do with each other.

But if you deal with purebred chickens, any particular breed is supposed to have a certain earlobe color and a certain egg color. Most of the breeds with red earlobes do lay brown eggs, and most of the breeds with white earlobes do lay white eggs. That is most, not all, and it's just a coincidence of what the people decided when they developed the breeds, and what breeds were used to develop what other ones.

Examples that do not fit that pattern:
Penedesenca, white earlobes and dark brown eggs
Dorking, red earlobes and white eggs
