Eggnog question

I can't find this answer anywhere... I'm attempting my very first attempt at homemade eggnog since I have a surplus of eggs right now.

Should I use fresh eggs or cold eggs from my fridge?

Also, Is there a secret to separating the yolks? I have a feeling I'm going to really make a mess...
I had always, since I was a pre-teen, made an easy, no-cook eggnog from an egg, heaping spoon of sugar, splash of vanilla and a couple cups of milk (Sometimes adding a spoon of coacoa for a creamy chocolate milk).
I had thought I had learned the recipe from mom's old 1964 BH&G cookbook, which I still have, but nope. Even making orange and grape julius drinks with raw egg in the blender.
I separate eggs by simply cracking them into my hand and letting the white run off the yolk thru my fingers. Fresh egg yolks break easy so I'd recommend refrigerated eggs any time you're separating them.
