In the past I've made a standing rib roast with potatoes and carrots and pumpkin pie but ... we're not eating beef any more since one of our family members has alpha-gal, an allergy to mammal meat. Not sure what we're having this year. Had smoked turkey for thanksgiving, don't want that again so soon.
 
100% Stuffing. My mom only makes it twice a year, so it’s kind of a big deal.
Last year though, I made rice pudding
How does your mom make it? I put chicken livers in mine.

Dressing, Green bean casserole, and sweet potato casserole are must-haves

We don't have a traditional holiday meal for Christmas, so no traditional sides. We're having ham this year, so maybe roasted potatoes?

Thank you. We've decided to have hay stacks, a family favorite. It's like a make-your-own taco salad, without the meat. We set it up buffet style with all the fixin's. It's a real treat. (And yes, she can have fish or poultry.)
