I tend to keep two toms through the winter for "just in case".
If keeping multiple toms, it is best to keep them separate from the hens although you can get away with having all the turkeys together during the winter until breeding season.
If keeping a single tom, he can be kept with the hens all year but does need to be prevented from having access to the hen's nests.
