First time hatchers - Day 21: so many questions

Oh gosh where do I start! We have 12 mixed eggs in our incubator and we really hope we have done all the right things to this point! I put the eggs in the incubator on a Monday at around 12 noon so first question is that day Day 1 or Day 0? If it was Day 1 then today is Day 21 and we have one out of the 12 which have pipped. This in itself has bought lots of excitement as we are worried throughout the process the humidity has been between 40-70%. Temp stable according to the incubator at 37.5 degrees Celsius.
On day 18 (which may have been 17) we took out the turner and increased humidity to as close to 70% as we can. At night it drops off sometimes to as low as 50 but when we add more water it quickly rises again. I would say 80% of the time it’s 70-80%.
My 7yo and I are very nervous first time mummas and are hoping all goes well but this first little egg that has pipped seems to have cracked the egg at the wrong end.
Ah we are so nervous and really want this first time experience to go well! Any advice, suggestions and words of encouragement taken gratefully!

The day you set them is day 0.
The day of the week you set them will also be the day of the week that is their hatch day. If they're chickens and you set them on Monday then 3 Mondays after is hatch day.
That makes me wonder if you set them on a Monday how is today a Saturday or tomorrow a Sunday hatch day?

Ok great so Monday is hatch day then thank you. I am in Australia and it’s Sunday here today!
 
lol, its easier to think of it as the first 24 hours is day1 .. but hatch can occur generally in a +/- 3 day window 'around' day 21 .. if its at around day17-18, not critical on timing, stop turning, only time its 'bad' to turn them is after pip, and its bad 'not' to turn them alot in the first 2 weeks .. humidity i dont think is critical myself, the key on both humidity and temp is 'steady' and or regular throughout the process .. steady as she goes is the best bet, dont want drastic changes to the plan in the middle of things..
