Food for thought, Raw Chicken!

When I went to Japan I had Chicken Tataki, Its chicken breast slightly seared on charcoal grill and its completely raw in the inside!!! Talk about fresh. its surprisingly tasty

not stringy at all and the sauce they serve it with is heavenly. Also they have quiet a bit of raw eggs dishes there which I cant get enough of!!!

Now I came back to the USA, craving for chicken tataki so I went to a near by japanese restruant I asked hey do you serve...chicken tataki? First I got looks as if i was crazy and when I asked what? she nearly fainted cuz she figured I wasnt joking. lol oh well..Guess I have to purchase another $1000 ticket to the east...actually I live in west coast so I travel west

would anyone eat raw chicken?

Food prep standards are really quite high in some places in the orient and so are the standards for the way things are grown and processed. And they eat many things raw that we do not here. I'd consider it there, and I'd consider it if I'd butchered my own chicken and KNEW it was cleaned properly.

In a food establishment in the US? Nah, I don't do commercially reared and processed chicken raw. Scary monster.

I still do eat a lot of raw foods many people wouldn't and have been fine my whole life. Now I want the recipe for the Tataki sauce. LOL.

There's a big difference between countries, preparation and food traditions. Good luck on getting another ticket

Wow I just saw a show on Food Network last night. They were selling fried duck heads and lips, chicken uterus and un-laid eggs. They don't waste one bit eh.

they really dont waste anything!! When I went to that place to eat the chicken ( It was a yakitori place) They eat every single part of the chicken! Nothing is wasted!! Even the bones! The cartilage was BBQed served with ponzu sauce. The chicken bones are quickly boiled with a pinch of homemade miso flavoring and NOTHING ELSE! miso is for adding a bit of saltiness to it so it doesnt taste bland, and boy was it good! I mean..they even had chicken butt skewers yum

That place served only chicken and every morning the chef kills and clean the chicken himself. Eggs are hand gathered every day. If there is any sign of poo on the egg he says he cooks it instead of serving it raw.

There was an egg dish that was so intricate! The egg was cracked on a heat proof plate, then he took pieces of the best parts of the chicken or whatever you request, and he carefully stuff the egg yolk (carefully so that the yolk doesnt leak and stay as a whole!) Then he use a blow torch and sears the egg till it smells sooooo good he torched the outer parts of the whites a little longer so it gets crispy. (blow-torched egg is totally delicious) the dish is sorta like ..a sunny side up egg with chicken in the yolk! You break into it and its kinda like dippy eggs. The dish is then moved to a prettier plate and topped with scallions and a type of garlic sauce

Are you sure the sauce your thinking of isn't ponzu. Tataki is not the sauce but a method of preparation. Wiki explains it http://en.wikipedia.org/wiki/Tataki. The sauce used can differ and you'll find recipes online for tataki fish with a variety of seasonings and sauces.
