I don't know much about pumpkins.
Are these pumpkins, suitable to make puree, and then pies??:drool:drool I know some peeps make pies from the common Jack o Lantern kind of pumpkins. Those are quite hollow inside, but they bake the seeds also.
I only once made pie, from fresh pumpkins. They were somewhat greenish in color if I recall correctly. (AND NOT BIG) Lots of work,,, so since then I opted for canned pumpkin pie puree.
The seasonings/spices is what I taste mainly from a pie.

The big ones with yellow inside are far sweeter than what they bill as "pie pumpkins". I made enough puree from an 80+ lb. Big Moose pumpkin to last me for many years.

I like pumpkin pie but make far more pumpkin muffins.

One of the best pumpkin pies I made was from a Field pumpkin.
