Got eggs & Zucchini - these patties are the best!

My husband would agree 110% on the cold beer thing. How did you tweak? Someone else used cream cheese and fried them like fritters and I have been wanting to try that too.

I have to get some more made - Husband works out of town for three months and took 4 dozen with him and my supply at home is now too low for comfort.

I just added garlic powder and seasoned bread crumbs in place of half the flour.

The past few days have been nothing but canning, cooking, baking and freezing. I'd kill to have that 6 burner Viking stove my sister-in-law has in her kitchen (and she never uses it)!

The best decision I made was a walk-in pantry that is 10'x10'. Have a counter top in there and can keep mixer, coffee maker, toaster tucked away and more counter space in actual kitchen for all the rest of the canning and cooking.

Gald you all enjoyed them. I made 28 for the freezer on Monday and had for dinner with bacon and friend egg stacked like a sandwich. YUM

Hmmm....what a great idea for dinner! I dont feel like cooking, and I did freeze some zuchini...and I have a few eggs....just a few, I cant believe they've ALL gone on strike...and some Italian bread crumbs...and an onion....mmmm mmmm mmmm.
 
ok, mine didn't turn out very good. I'm sure it was the cook, but they were rather soft. I had kind of got the idea that they would be crispy. Suggestions?
