Hi, What herbs(DRIED OR FRESH) are ok for ducks and chickens?

I have dried sage right now that I am thinking to give ducks and chickens but wondering ok and how much? Thanks
 
Why would you want to feed condiment to your chickens?
If it's not something chickens would naturally eat, don't feed it. My chickens hate sage. They also hate thyme and oregano. Chickens know best what is good and what is bad for them.
Feed your chickens fresh greens, like salad, chicory, spinach, chard, alfaalfa, clover, dandelion, cabbage...
Leave condiment for when you roast them.

Maybe they want to marinade them from the inside out 🤣

All joking aside herbs are good for poultry and mine are constantly attacking the sage, parsley, lemon balm, lime balm and any other herb that they can get their beak's onto.

My chickens don't touch stramonium and digitalis, which I grow in large quantity as vole poison, but I'm pretty sure that a bored chicken confined in a run would poison itself if given the chance. Mine free range and they don't touch any of the herbs you mentioned, so if a free ranging chicken chose not to eat something, it would make more sense and be on the safe side to not feed confined chickens what a feral chicken refuses to eat.

Mine free range too and have access to a big verity of plants, grasses, fruits and vegetables along with their feed. They know what is bad for them and will not go near the garlic or nightshade plants.

It also depends on the bird as well, I have some that go berserk for the scented geraniums but other birds that will not go near them.

I don't know how much as mine usually eat it straight off the plant. Try throwing a small hand full out for them and see how they go.
