Here's a recipe to use up cucumbers fast!!

If you're like me you have WAY too many cukes growing...

Here is a recipe that can easily get you past the over abundance of your cucumber plants and this is a very good, nice, cool cucumber salad!!

Sour Cream Cucumber Salad

3 medium cucumbers, peeled (or not) and slice thin 1/8 to 1/4"
1/2 tsp salt
1/2 c. finely chopped green onions
1 T. White vinegar
Dash of pepper
1/4 c. reg. or light sour cream

Sprinkle the cucumbers with the salt and let sit for 15 mins. Drain. Add onions, vinegar and pepper. Just before serving add sour cream. Very yummy.

Yield: 6 servings

Oh Yeah! I've been eating them that way for 62 yrs! And yes they are GOOD! A garnish of fresh chives makes it even better.

Oh and chick4kids I have a thread going about fermented dill pickles. Check it out. I taste tested them yesterday. Get ready to throw out all your store bought pickles!!!

Thanks! I was just trying to remember exactly how my mom makes her cuke salad, and I saw this recipe. I think she adds dill to hers, though. I'll definitely give this recipe a try!

Our recipe is just a bit different. It uses mayo, vinegar and just a bit of sugar. Oh, a a tad of dill weed, too.
In fact, we had it for supper last night and when Dh saw it, he said he had just been thinking about this cucumber salad.
