how do you open a quail egg?

mine i end up stabbing :p have to cut through the membrane to open the little things! which is a PAIN when you are feeding more than yourself (40 eggs for an omelette the other week SHEESH!)
 
For the boiled ones, the best I've found of all tricks is to make sure they get cold before you peel. I dump a ton of ice in with them and let them sit in super cold water or in the fridge until they are cold all the way through. The two times I tried to peel them just barely cool they were a disaster.

I want the egg scissors. I saw them and was wondering if they were worth it. They were almost $20, now they're $15 so I'll give it a go. I blame you guys if it doesn't work!

I have very little experience with quail eggs so far because I don't have any of my own yet. I'll definitely be getting some as soon as I make cages and hatch some mailed eggs as I've had no luck getting any locally.

I did pay an outrageous amount of money for some at the health food store and ended up boiling them all. I'd done the float test and they seemed to be really fresh ones so I was really excited when this trick worked! Place boiled eggs after cooling a bit under running water in a jar with a lid and shake it. The shell was super easy to peel right off. I placed up to three at a time in my jar. I really need to try this with a fresh egg from my ducks to see if it works as well.
 
That's interesting because when I put them in with the ice, I swirl the pot around to try to cool it as quick as possible. Maybe it's the banging more than the cold or maybe both.
 
Im not sure if i read somewhere that you can add a tspoon of baking soda and it helps, im not sure.

like chicken eggs i always cut the top and with a small spoon i can get the whole egg! i do the same with quail eggs just that i use some baby spoon. really small ones.

The first time I was given quail eggs I looked up how to hard boil them. They were quite easy to peel and is how I always do this. (I've still to get my own quail. It's in my nearly immediate future though!) Here's the recipe in case anyone still needs it.

Hard Cooked Quail Eggs (for easy peeling)

Bring to a boil: 2 parts vinegar to 4 parts water (this is how the recipe said, so don't blame me, lol)
Drop eggs in and boil 4 minutes.
Remove and drop immediately into ice water (I took a couple hands full of ice and added water to a big bowl.)
After they're very cold, remove a few at a time and drop into a clean can/jar/the like.
Shake vigorously a few times.
Peel.

Works great.
 
If you don't have a quail egg cutter you can use a serrated knife like a steak knife. Hold the egg large end up, and slice the top off with the steak knife. The membrane will act like a hinge and give you access to the egg.

I've opened quail eggs several ways and all seem to work, but the best is to get a pair of quail egg scissors. They are pricey on Amazon but free shipping if you order $25 worth of goods. So, I ordered two pair and got free shipping.

Next best was simply tapping them smartly on a flat surface and opening like a chicken egg. Next best is to use a good serrated blade knife. Martha Stewart has a video showing how to use the serrated knife blade method. She must have had 50 eggs in a bowl and all the yolks looked perfect. You may need to keep a couple band-aides nearby though. Search for "Martha Stewart cracking quail eggs".

I saw a You-Tube video of a fellow using a sharp pointed paring knife to poke a hole near the top edge then pip around to form a cap.

I have the plastic Eggies cups that I hard boil the raw eggs in. About five quail eggs is enough to fill a cup. Put a lid on it and drop into a pot of water to boil. No need to cool individual eggs and peel them. I like to eat my hard boiled eggs warm. They pop out of the plastic cup easily without cooling in ice water. Just hold the pot under a cold water tap. Look on Amazon or eBay for the Eggies. They are inexpensive and some may have free shipping.
