How do you prepare your Coturnix quail for dinner?

This was the brine from Muddy75 (4c Apple cider 1/4 c each apple cider vinegar, dark brown sugar, kosher salt). Then I put some butter over it, a bit of salt, then cooked at 500F for 13 minutes. I only did 1/4 of the quantity of the recipe since I only brined 1 quail. (1 cup apple cider, 1 Tbsp apple cider vinegar, brown sugar, and I used sea salt)

with quail we have brined previously rested and frozen for as little as 10-12 hours and fresh for 24-48 hours.....with quail that is sufficient.....for bigger birds (chickens/turkeys) we go 72 hours or longer. DH just saw a new video using pineapple marinade for 2 hours on tougher cuts of red meat that he is dying to try on some venison this season!! i i will let you know how it goes!

Confused. You said you were out of apple cider vinegar, and then listed it as one of the ingredients you used.
 
I'm trying a version of this tonight. I've modified the recipe, though since some of the ingredients are things I don't have on hand. I substituted with things that are actually Asian ingredients however. I also made 1/6 of the recipe since I'm only making one quail. I added links to amazon for ingredients that people may not be familiar with.

My version of the saue goes like this:
1 quail
1 tsp bulgogi sauce
1 tsp sesame seeds
1 tsp gochujang
1.5 tsp sesame oil
1 tsp agave syrup
.5 tsp mince garlic
1 tsp fresh grated ginger
2 tsp sake
2 tsp soy sauce
