How to cook a turkey

So how are you all going to cook your turkeys on Christmas day (if you are actually turkey). Mine always turn out quite dry so I am interested in how you prepare and cook them. Any advice?

Do you open the can of beer first, or is it just to keep the turkey company?

The beer adds a little flavor to the meat, and the bag that is tightly tied and zip tied closed will keep most of the moisture in while the turkey is cooking.
 
I make three every year Baked, Smoked and Fried. The fried is always the most popular and when the family shrinks and I have to cut back to one, that's what I will do.
 
My secret is to 1) never use a bird that's been frozen and 2) do not overcook. Farm fresh ONLY! I stuff it with my super 'secret' stuffing, slather butter all over it, sprinkle on whatever herbs strike my fancy, cover it and cook at about 325F for a while, basting every hour or so. I uncover it for the last maybe ?hour?, keeping the leg and wing tips covered with tinfoil, to brown.

I've also done beer can turkey on the BBQ - that was DIVINE.
