I only have little giant still air incubators also with no turners. I turn my eggs by hand and I don't add water until day 18 just before I go into lockdown. I hatched all but 6 that went into lockdown at 45-60% initially then as they started hatching it went up to 60-70% as the chicks were hatching out. I filled all the water troughs up and put 2 wet washcloths in the incubator and that worked better for me.
This was the best hatch I have had in a while. I read ChooksChick cheat sheet she has on her profile and lots of good tips there.
My incubator temps range from 100.9 to 102.3 and I have my incubators set up away from sunlight and drafts. My house does get cold overnight so in the mornings my temps are lower so I will adjust the temp until it gets where I want it to be.
I don't use my red plugs either.
