I don’t know which thread to post this in so it’s going here. 😆 I have a question about egg storage. I know the answers to the questions about washed v. unwashed and refrigerated v. unrefrigerated but the thing I can’t seem to find an answer to is this… If I keep my eggs out on the counter for a couple of weeks and THEN put them in the refrigerator are they still good in the fridge for the same amount of time (3 months) as if they had been in there from the beginning? Like, did leaving them out on the counter first speed up the aging process and reduce the amount of time they will be good in the fridge? I hope my question is understood because this has been making me crazy. 🤪 lol

They will still be good in the fridge. Just for a reduced time.

Keeping them on the counter does age them faster than in the fridge in that they lose moisture faster at room temperature.

To get the longest shelf life refrigerator unwashed right away is the way to go.

You could always start water glassing the extras... We've had good success for keeping them up to ~ 2 years water glassed.

They do get a little thin after they've been in the bucket a year, but they still work great, especially in baking.

(We just toss an extra egg in if they seems thin, and we always crack them into a separate dish and do a sniff check before adding them into the batter)

Normal house hold range - say anything below 80 degrees. The warmer, the less long they will stay good. I keep a small bowl on the counter, if I get more than that - I move them to the fridge, if I start getting over run with eggs - I give them away or water glass them.
