I'll probably just rip it out and put on plywood. I know nothing about building but I'm good with tools, this chick is gonna take yet another ride to home depot. Regarding the roof, what you put something on to cover the plywood?

Yes, for sure...anything from tar paper and shingles to metal roofing sheets to...anything durable and waterproof.

You don't want the inside of the coop to get wet at all.

Question though, my BIL has a bunch of brand new plywood he can bring over.. but it's I believe just your everyday cheap ish plywood. Would that be okay depending if it's thick enough?
