Introduction: I've had chickens for about 30 years. Last November, a coyote got in my yard during free range time. I don't free range now.

You won't know the friendliest rooster until you meet him. It really does depend on the individual bird. And he's not going to do one single solitary thing to protect the flock from a coyote.

I would suggest you set up a pen with electrified poultry netting and charge it with a 10,000 volt charger that is very well grounded with two or three six foot long grounding rods. That will keep it out.

Why do you want a rooster? They're not really capable of protecting the flock from large predators, that's your job - either with them penned up safely, ranging within electric fencing and aviary netting or free ranging with/around large LGD(s)

My friendliest roos are a Chantecler and a Bruges Fighter, but they aren't my best flock roosters. I gave a young Chantecler Cockerel to a friend and they just love him because he is so friendly.

My best rooster is smaller, a Deathlayer, about 5 lbs and unsocial to humans and I think he rather dislikes but tolerates me. He's the best rooster because he is slightly high-strung, ever watchful, takes very good care of his hens, but most importantly - THE HENS RESPOND to his warning calls! That's what makes him great. I don't expect him to fight anything off, I expect him to get his hens to safety and he does, every single time. I actually think he's the only rooster that knows exactly how many hens he has, because if one is missing, he will actively search for her and scold her back to the coop.

I have a lot of roosters. This is my best rooster. He doesn't really do anything, but look pretty, but that's really the only thing any of my roosters are good for.

Love it! I'm always watching rummage sales, flea markets, lawn/farm stores, etc. for one of those that isn't going to cost me a fortune!
 
My sympathies regarding the coyote.

I'm assuming you mean friendliest towards humans.

I've had good luck with dark Cornish and rose combed brown leghorns, though I don't raise either breed now. Turkey headed michelen seem pretty friendly. Jersey Giant this far seems decent?

I think in general though, the bird that is hand fed and handled a lot from hatching is going to show better results than a specific breed.

Some of the truly tiny, and some of the truly giant breeds seem more inclined than most to be socialable.

I guess also the liege fighters are pretty nice? My roosters there still seem pretty friendly and I've not handled them much.
