I'm looking for food for when I move my pullets in with my adult hens. Would this be suitable to keep everyone on long-term? I provide oyster shell for my hens.

In a nutshell, yes. Good essential amino acid and fat-soluble vitamin numbers
At least as important is freshness. Always check the mill date before buying. Less common feeds like this are sometimes left on the shelf unsold longer than they should.
The crude protein may be a little too high for constant feeding.

The protein level is fine, it's not until you get around 30% until you start running into problems

Thank you, how old is too old?

Those numbers are way too high for chickens. Game birds can handle up to 30% when chicks or poults but as they approach adulthood those numbers are very hard on the liver and kidneys.
