Lemon Meringue Pie & Key Lime Pie Thread!!!!!!

I have my MIL's recipe for lemon meringue pie. For years, I've had terrible luck with the lemon curd staying thick and not breaking and turning into lemon soup pie.

I even made the pie while she was visiting one year at Thanksgiving. Lemon Soup pie.

She never, ever told me the secret to how to keep this from happening, not even while I made it right in front of her.

The meringue MUST go on the lemon curd while the curd is still hot! Make the meringue first. Make the lemon curd filling. Fill the pie crust. IMMEDIATELY put the meringue on the pie and bake.

I wonder if she laughed about this after she went home.

I have never had key lime pie. So by default, I like lemon meringue better.

You’ve never had key lime!?!?!?! A good key lime is amazing. Those frozen ones are ehhhh.
