Here's one from Southern Living. I haven't tried it, but it sounds good. I would probably use a little less red pepper though. 1/2 teaspoon sounds like a lot to me. If you try it, let me know if it's any good.
THAI LETTUCE FOLDS
2 tablespoons peanut oil
2 cloves garlic, minced
4 skinned and boned chicken breast halves, cut into 1/4 -inch cubes
1/3 cup chicken broth
2 green onions with tops, finely chopped
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1/2 teaspoon ground red pepper
1/4 teaspoon ground ginger
16 Bibb lettuce leaves
1/2 pound fresh bean sprouts
Cucumber Dipping Sauce
1. Heat peanut oil in a large skillet over medium-high heat 1 minute. Add garlic and chicken; cook 3 to 5 minutes, stirring constantly. Add broth, and cook over medium heat until most of liquid evaporates. Remove from heat. Stir in green onions and next 5 ingredients.
2. Spoon 2 tablespoons chicken mixture onto each lettuce leaf; sprinkle with bean spouts, and fold over. Serve with Cucumber Dipping Sauce. Yield: 16 appetizer servings.
CUCUMBER DIPPING SAUCE
1/2 cup water
1/4 cup sugar
1/4 cup rice wine vinegar
1 tablespoon plum sauce
1/4 teaspoon dried crushed red pepper flakes
1/8 teaspoon salt
1/2 cup finely chopped cucumber
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint leaves
Combine first 6 ingredients in a small saucepan.
Bring to a boil; reduce heat, and simmer 3 minutes. Remove from heat; cool.
Stir in cucumber, cilantro, and mint. Yield: about 1 cup.

my friend at school had a lettuce wrap and she gave me part of it and it was YUMMY. i never found out what it was made of, and for the tomato/egg/noodle. i really wanted spaghetti o's and my mom was like YOU CAN MAKE IT YOURSELF. blah blah blah-ya know normal mom stuff.. so i just made my own spaghetti o's. i really wanted eggs but i just said-yea skip that :]
