How long is your trip? You're two days away from lockdown for chicken eggs. If I were you, I'd up the humidity to hatching humidity and try and put in enough water to last for 5 days. The chicks will be fine two days beyond that in the incubator by themselves and once they hatch they don't need the high humidity. So you have 5-7 days to go on your trip and come back before you have to add the chicks to the brooder and give them food and water.
Best option would be to get someone to come over once a day to add water and check on them.
If you could get a mobile adapter that would interface with your incubator, maybe you could try it, but vibrations and spillage and any power outages would not be healthy for the chicks. Also, would you get back before you need to brood them? There's a lot of things you'd have to account for. The incubator would need power 24/7 with no more than 30 minutes a day out of temperature/humidity prior to lockdown, and shorter periods than that after lockdown.
I had eggs incubating in incubator (dry hatch) for a week. My husband found a trip we could not pass on because of the price. We had to leave the next day. I left eggs in the incubator and we were back in time for the hatch.
A different time, a different instant trip happened. I think the eggs were 2 weeks in, we came back 2 days after hatch, but I had a water-er and feed set up in a home made incubator. I did have to help one chick out of the egg, out of 11 eggs set 7 hatched, and the ones that didn't got kicked away from the heat.
