Older dual purpose smoked chicken

I was given a chain link dog kennel and dog house.
So I got idea.
I have seen Facebook ads for free roosters and I made the kennel into a rooster drop off coop.
I had someone drop off a rooster and we slow cooked it in a crockpot.
I know older dual purpose chickens are tuff.
I was thinking of different ways of cooking them to make them tender.
I have seen wood pellet smokers that are electronically controlled.
Would a older dual purpose chicken be tender and taste good smoked on one of those smokers?
Would it be tuff?
 
When it comes to old birds keep the temp below 180*. Smoking or oven should work fine provided the temp is low. Crock pots get too high in temp in my experience.

We do our old birds in the oven. It's easier to keep the temp. I've never smoked an old bird, only the young ones. I gotta give it a try and see how it is. It's hard to get my smoker below 190-200 though.
