Ingredients:

Cooking Instructions:

Place fresh eggs in a steamer basket. Add water to just under the eggs. Place on the stove. Turn on the heat and set timer for 30 minutes. When the timer goes off remove from the heat. Pour off the hot water and cover the eggs with very cold water. Allow to sit in the cold water 10-15 minutes. Remove from the cold water and peel.

I am wondering what the 30 minute cook does to the nutrient value. Stated differently, I wonder if bringing to a boil submerged in water, timing a (1.5 minute) rolling boil, removing them from heat, sitting 10 minutes covered, and then proceeding as you do with cold water and ice, would produce a more or less nutriious egg? That is the way I do mine, and I put them damp in a Ziploc in the fridge and use over a couple of days.
