Plant-based recipes, Alternatives to meat (to avoid processed foods)

I was asked to start a thread after mentioning a recipe I like to make. I am not vegan, or vegetarian, but do like to incorporate plants into as many meals as possible without buying processed ready-made products.

Here is the recipe for black bean sweet potato burgers!

2 tbsp olive oil
1 finely chopped onion
1 can black beans, rinsed
1 medium sweet potato (cooked & mashed)
1/2 cup breadcrumbs (I use homemade)
3 tbsp sriracha
2 tbsp salt
1/2 cup cooked brown rice (white would work fine also)

Sautee onion in 1/2 of the olive oil until translucent & soft. Move to bowl. Add all other ingredients except oil to the bowl. Mix with hands and form patties.

Put the rest of the oil in the pan. Place patties in a few at a time, and cook about 2 minutes on each side, until browned.

I serve on buns with smashed avocado, but they are great on a bed of lettuce or just plain! You can do multiple batches at once and freeze for later on wax paper.

4 small or 2 big
LENTIL BURGERS
(vegetarian not vegan)

Place 6 olives, 1 tomato, 200 g lentils (canned), oregano, 100 g breadcrumbs and 1 big or 2 small eggs in a food processor. Grind this to a fine mass.
Knead two round burgers from this mass.
Heat some oil or butter in a frying pan and fry the burgers for about 6-8 minutes until nicely browned.

Serve it instead of a meatball on a plate with veggies and potato or rice.
Or as a hamburger on a whole wheat bun with hummus, some raw spinach, crumbled feta, and pieces of olives and tomato.
