Poke Salad

It's definately a southern thing......So Cal Girl....but, all of my family is from the deep south....I am going to raise me some peanuts this year. Raw is not the same as green.
 
Poke is a type of green that grows wild. you pick it when its about 8 in. high, it can grow very large, I've seen it taller than me, and I'm 5'4. When it matures it has berries on it that are poisonous. Its a real big deal down south.

THAT's what's growing in my yard???? Dang. I always let it grow and the birds love the berries. Just don't park under a tree where the birds hang out..........................................

we eat it every year and yes I am in the hollers of kentucky, we also have a polk salad festival every year here.
I boil mine, drain it boil it again in fresh water drain it and repeat 1 more time, then i scramble eggs mix it together, sometimes I will add onion meal and a little flour and fry it in patties then other times i just boil it and put scrambled eggs in it. my DH loves it and so does my youngest dd. serve with a kettle of soup beans and corn bread. another big thing here is ramps and moral mushrooms(hickory chickens ) ramps are wonderful but you cant get around anyone for about a week after you eat them or so I am told.

I wish I was brave enough to try it. We have it all over here. My family loves all kinds of greens and cornbread. I would love to have an elderly person teach me all the tricks of the trade from way back when.
 
I boil it, while frying up bacon. Drain the poke, toss it up with bacon grease and vinegar, crumble the bacon on top. Then throw on some parmesan cheese. Mmm, poke sallet!

(Yes, I am from Kentucky!)

Edited to add: This is a springtime treat. Don't pick it after it gets big. How big, you ask? Well, it's a judgement call. If you are wondering if it's too big to eat, it probably is.
