Does this make your house smell like onion?
Yes. But I did it right before bed so the worst of the smell is gone by this morning. And I actually don't mind the smell. But man, did they make me tear up when I was cutting them! I had a beeswax candle burning and my sunglasses on
 
I harvested about a half bushel of Jerusalem Artichokes. Last year I tried to dig all the phone tubers out, but I apparently missed some and got a huge harvest. Unfortunately, I wasn't that fond of them. Does anyone have any suggestions as how to preserve or prepare them that they find to be delicious?
I still have more of them to harvest.
 
I'm finally getting this cheese making stuff figured out with a lot of trial and error. I've been journaling all the cheeses I've made and exactly what ingredients I use, so when I don't like a cheese I know what "not" to use. Today my husband helped me smoke my Jalapeno Cheddar cheese, made from the jalapenos from my garden! So fun. I also made a Cotswold cheese made with garlic, chives and walking onions that I dehydrated from my garden.

Roast them sort of like potatoes. Try not to overcook them so they don't get mushy. Season with herbs, garlic, salt and pepper. A bit of olive oil and/or butter.
