If you know what to look for, yes. But as far as taste, texture, etc, you cannot tell.

After my recent experience with too many roos to hens, I think that the ratio is important. And I can't say too much about the temperment of the rooster, too. Almost imediately upon removing my two mean/rough roos and one mean (peck 'em 'till they bleed) hen, the flock settled into harmony. Ratio is now 10:1 and the 20 girls and 2 roos are much, much happier now. Since my roos are over 100 ft from the house, the crowing is something nice, not bad. I was originally going to eat all the roos, but I'm glad I'm keeping two of them.
