I don't generally fold clothes going in a suitcase, I roll it. Less wrinkles that way if done right. So then there is no top or bottom, things get packed mostly side by side, like burritos. Much easier to find things that way. Socks and unders on the left, then t-shirts, then slacks, pyjamas, swimsuit... maybe a robe on top. Shoes tucked around the edges.
 
Depends what bag I am packing. For trips on low budget airlines with only an underseat bag, I have an Osprey Daylite 26+6 that opens both from the top and as a clamshell on the side. Generally I pack bulkier clothes items first, and then packing cubes with smaller items. Electronics and personal care items go in last, at the top, so I can access them during travel. Pajamas go in last on the side so they are easily accessible when I open the bag from the side.

If I have a carry-on, or heaven forbid, a checked bag, I tend to pack different classes of items simultaneously across all bags & split them so if the airline loses my bag I don't lose ALL of my shirts at once. Heavy or less necessary items go in the bottom, jackets, books, etc. I have an 80 litre hiking backpack as my checked bag - infinitely better than running around pulling multiple wheeled bags behind me.
