Wondering if rooster jerky/chips would be any good or if anyone has tried it with specifically rooster meat before. I have an extra roo up for harvesting here in a week or so about 13weeks old and I would prefer a dried recipe over long cooking.
Should I let it rest before marinating or jerky-ing? Should I try mincing some of the meat instead of slicing? Any ideas are welcome! I've made plenty of chicken jerky/chips before but I'm not sure how rooster meat would differ in this process, I think the taste would be better if you like gamey jerky but I guess I'll find out soon. Thanks guys!
