I bought 3 rotisserie chickens at costco yesterday, and 2 cases of stock.
My soup will be sort of simple. I am going to debone the chickens and add the bones to the stock. Season the stock with onion, garlic, fresh Thyme, rosemary, sea salt and pepper.
I will let that cook until I see the herbs are thoroughly cooked.
Then I will strain it.
I will add celery, carrot and season based on taste.
Add the chopped chicken.
I am going to separately boil the egg noodles so they dont soak up all of the broth. When it done I'll toss with a bit of olive oil and not add to the soup until tomorrow. I am going to use my large table top roaster to heat and keep the soup hot during the tea. Ill add the noodles once the soup is hot . This way they are not over cooked. I bought some parsley to add when I add the noodles.

I hope its not to plain.

It sounds delicious! It may be simple but the way you’ve thought it out it will not be “plain”!
