We have always had 3-6 chickens. Due to old age and or a predator, we have two. If one of the two dies will, can the remaining chicken be okay or should we find a home in a flock? I can’t get 6 more (local laws)

Will the local laws allow you to get 2-3 more?
If so, check the classifieds/Craigslist/marketplace for farm swaps or POL pullets.

Do you have other animals she will hang out with? (I know someone who's down to a lone hen who hangs out with the cat and small dog.)

Generally speaking, introducing a lone hen to a flock means she will be picked on or always be a loner on the edges. There are exceptions, but they do tend to be rare.

Ideally you'd get more chickens as companions or rehome her to someone with an existing flock. If neither is practical (you don't intend to continue with keeping chickens and the hen has some sort of health condition or is just too old where rehoming would be difficult on her) then you and your family should spend more time with her to make up for the lack of other birds.
