And they are delicious! I’ve seen a few recipes around but I used about a cup of mashed banana to 1 cup quick oats plus a 1/2 cup old fashioned oats, then dumped in some mini chocolate chips to my preference, shaped like I would a burger patty and baked at 350 for 10 mins. I doubled the recipe because I had three bananas to use up and made a dozen big cookies.

I think this could use a pinch of salt and that unsweetened coconut flakes instead of the chocolate would be really good in these. Maybe a few dried cranberries to give a little twist. These could also be good with coconut flakes and chopped dried apricots I think I’ll try that next.

I like that they’re versatile, quick and simple but still give you the feeling you’re eating junk food.
