I picked some of the little bok choi plants that are already going to seed so I can have at least one salad from them. I planted the seeds in the garden just a little over 4 weeks ago. Why are they bolting already? Baker Creek seeds, no less.

I'm kind of looking forward to the end of this gardening season. It's been a lot of work, and there's still a lot to do. But I'm already planning next year's garden. Old habits...

Trimmed and crushed another quart of tomatoes. Three more pints and I can make the first batch of tomato sauce.

Gave the chickens kale and bok choi from the garden, and a bunch of fresh weeds from around the house.

I'm picking no more beans. There will be enough yellow wax and rattlesnake beans left for planting next year. I have a nice looking cauliflower that's almost 6 inches across so far.

A have a volunteer tomato plant that did well. The tomatoes are shaped like Romas, but two or three times the size. Need to save seeds from that one.

I know what you mean though, you get sick of the demands of this years veggies while planning the next lot! My Dil planned a Hawaiian vacation for us all this next week so I’m trying to decide if I should deliver loads of beans and tomatoes to elderly relatives or just haul the whole mess to the food bank.
 
That is the same as a dehydrator.
I have one use it allot on herbs and fruits.
Not the same at all. Dehydrater uses heat and freeze dryer uses cold. There is a difference in nutrient, flavor and quality of food.

However, you can get a dehydrator for about $150. Freeze dryer costs a bit more.

BTW, did you know you can dehydrate foods in your oven at low temps? That was something I looked into when I got an air fryer that has several other functions. One is dehydrating, and I thought, if I can do it here, why not in the oven? Turns out I can do it in the oven.
 
I'm thinking about trying the dehydrator with my little fan underneath it. Maybe the forced air going past the heating element will make the dehydrator run a little cooler.

Or I could rig it up with an incandescent light dimmer. That would work for sure, but would cost a few bucks. I'll try the cheap way out first.

Small round dehydrator for $30 new. They go on sale on Amazon a lot.

Hubby has asked if I want a freeze dryer several times but I don't want to deal with the upkeep
