My latest batch of sauerkraut fermented for 20 days. One head, about 2.5 pounds, made 4 pints of kraut plus a pint of kraut juice. I'm going to make red cabbage kraut next time.

looked back for my last batch of home made kraut, I guess its time to make some, we have been buying raw, but,,, ya i should make some https://www.backyardchickens.com/threads/sitn-on-the-porch.1297783/page-383

I have a 5gal and 3gal ceramic crocks, but have been just using jars lately

You both make me so jealous with your sauerkraut. I love it, but I don't make it. I just buy Bubbies. It's pretty good. Boar's Head is the best, but the last time I bought it the texture wasn't right. It was kind of mushy, so I switched to Bubblies. Wish I could make my own, but I never want the smell of rancid cabbage in my house again after my first attempt.

Nice looking kraut. I haven't tried making it with carrots yet, but I did add a teaspoon of cane sugar to the last batch which seemed to make the ferment a little more vigorous.

Haha! About a week into my first batch I was looking for a dead mouse in the pantry, then I realized it was the kraut!

try and find kraut that is not pasteurized, it is better for you
when I buy I look for RAW-
