Since you are having issues, I would make sure you have some kind of venation for fresh air coming in just above the level of the litter. And vents near the tops of the walls (and not in to the attic/loft area) to the outside. Yes it will let cold air in, but you need to get that air flowing. All that moisture is going to ruin your roof and the rest of the shed.

So if I am reading this right, opening a 2" by what ever the length of the coop on 2 opposite sides would create enough air flow? But what about bad weather? Rain or snow?

Ventilate the coop and do some poo scooping every week. At least.
