What chicken parts do you give to your dogs?

Your dog can eat the entire raw chicken. Whether he should or not, well that's a management/ dog guardian decision. I cut off the feet, and will eventually give one at a time to him as a treat to eat outside. I also cook and feed giblets as training treats. Don't ever feed cooked chicken bones to your dog - that's a good way to get a dead dog, as they will splinter and puncture his internal organs. But uncooked bones are fine, and are actually healthy for him. Look up information on raw diets, and how to get your dog's digestive system ready to do that, there can be some digestive upset during transition, which may also apply to raw fed chicken "treats". Also consider if your dog chews or bolts his food - if he's inclined to sit there and chew it up, there's much less risk of internal injury from bone fragments. Dogs are designed to eat raw meat and bone though, it's quite healthy for them. I'd say, do more research on raw diets and raw meat/bone consumption, and then decide what is best for your individual dog.
