What exactly is a Cornish Game Hen

My wife asked me this the other day and I could not answer it. I suppose
I could google it but I'm sure I'll get a better answer here. I am talking
about the ones considered a delicacy.

From what I've read on the hatchery sites, the standard "Rock Cornish Game Hen" is a very young Rock X Cornish pullet, that dressed out at 2-3 lbs. I don't think they even live 6 weeks in most cases.

Yes it is a young meat bird pullet, about 4 lbs, that is extreamly juicy, tasty, and tender.

Is a Rock X Cornish the same as a Cornish Cross?

Unlike veal nothing is done to confine them or alter their diet, they are raised just like all broilers, just not as long. Then can be processes as soon as you wish, but the target is for about a 2 lbs bird. The hens are used only since they don't grow as fast or get as big anyway so it seems more thrifty to do this with hens. I have had to process roos at that age/size due to leg deformites and they taste just the same.

Some folks do Bresse chickens, which are raised a bit like veal, confined and fed lots of milk and corn to keep the meat texture very fine. Generally they are kept to an older age than broilers generally are though.
