Whatcha Making for Supper?

Diners good afternoon one and all!

Tea is ready.

Supper: Chicken thigh am and mashed potatoes for hubby and I am having some sliders with ham and cheese.

Temperature is in the 70s cloudy.

When I went out to see my chickens yesterday I found one of my Barred Rocks dead and a rooster in my coop.

I do not have a rooster and do not know where he came from.
 
Looks good, would you write this up for those of us who would liike to try it?
Sure, I'll try to remember. The Pyrex baking dish I used was, I think, 9x13.

1 quart tomato sauce, homemade
3 lg bnls/sknls chkn breasts, cut into 2" thick sections
1 patty pan squash 1/2" dice
1 medium yellow onion 1/2" dice
1 green pepper 1/2" dice
2 small jalapeno peppers. sliced, 1/4" rings
1 cup fresh curly leaf parsley, chopped
whole basil leaves
small potatoes, halved
2 Tbs veg oil
salt/pepper

Spread 1 cup tomato sauce, bottom of dish.
Layer 1/2 of chopped veggies and herbs onto sauce.
Position chicken on top of veggies/herbs/sauce
Salt/pepper chicken
Top with rest of veggies/herbs, remainder of sauce.
Season potato halves with salt/pepper, toss with oil.
Place taters on top, pour remaining oil over top of everything.

Bake at 350°F for one hour, or until veggies are cooked. Chicken breast might be overcooked to your liking. You can substitute chicken thighs, which can handle longer cooking times.
