Can you get a video of her actions?
Upload video to youtube and provide a link.
You've checked her crop to make sure it's emptying, looked in the beak for any lesions/canker and inside the ears for any pus/infection and/or mites correct?
Just trying to rule out any other reasons for shaking of the head.
I'll have to work on the video idea. Don't have much experience with uploading to media acct. Can you get a video of her actions?

At one point, I did feel her crop and it felt relatively small and soft. Thought that was good. Plus she has been eating and pooping, so I figured it must be emptying. I looked in her ears and didn't see any pus or other blockages. I'm assuming that I would see lice or mites crawling on her if she had them? I have not looked in her mouth. Honestly I'm not sure I'd know how to go about it.
Is it unusual for the head to shake while stargazing? Its happening even at night. Seems like it would be hard for her to rest.
Also, today I only gave her a few bites of egg with her vitamins, thinking she would eat more of her regular feed but she didn't.
