Hi!

You can't really tell the gender of an emu by looking at them. When they get old enough, a female will start to 'boom', a vocalization that only they do.

Alternatively, you can have them DNA sexed by sending some feathers or blood out to a company that handled that, like Avian Biotech or iQ Bird Testing.
