So the girls are finally laying & "earning their keep" as my dh would say

Now, I need a good quiche recipe! I never have made one before and I'm hoping to add it to a regular dinner item that is served in our house. TIA

Mine is simple, and uses a lot of eggs.

Line a pie pan with a flour crust, either home-made or ready-made
Cover the bottom of the crust with sliced or chopped carrots, fresh or frozen

In a big mixing bowl, thaw a 10 oz box of frozen chopped spinach (or chopped broccoli) and squeeze out all the water
Add about 8-10 eggs, about 1/2 cup milk or cream, and a couple teaspoons of seasoned salt
Mix it all together with a big fork until frothy
Pour it over the carrots in the pie pan
Add more beaten eggs & milk if needed (after a while you'll know just how many will fit in your particular pan)

Cover edges of crust with strips of foil or crust covers
Bake at 350 degrees for about 30-40 minutes, until eggs are done & set in the middle

Turn off oven, remove quiche. Cover top of pie with about 6 ounces of shredded cheese. Return to oven for about 5 minutes, until cheese has melted.

This is great served with potatoes baked in the oven with the quiche. I invented this when I was pregnant with my oldest, it's a complete healthy meal in one dish -- carbs, protein, dairy, dark green leafy & deep orange veggies. You could add some chopped meat if you want, ham or turkey.

My family loves this, it's a great way to use up eggs, and it's a popular dish at potlucks and for meals made for friends in need. I like to bring it to new nursing moms, it's a complete meal that can be eaten with one hand.

I made one tonight and included some duck eggs and omitted the milk, it came out fantastic! My teenager said so.
 
I LOVE quiche! I just made this one last week. It's quick and easy.

Ingredients
4 eggs
1 cup half-and-half
1/2 cup real mayonnaise
2 tablespoons flour
1/3 cup minced onions
Salt and garlic powder
8 ounces shredded Swiss or sharp cheddar cheese
1 package frozen chopped spinach
1 (9-inch) unbaked pie shell
Directions
Preheat the oven to 350 degrees F. Hand whip eggs, half-and-half, mayonnaise, and flour in a medium mixing bowl. Add remaining ingredients. Pour into an unbaked 9-inch, deep pie crust. Bake for 45 minutes to 1 hour or until the top is golden brown.

I just used spinach and a package of mushrooms, steamed. You can add any fillings you want to. And I used sharp cheddar cheese. Delicious!
 
Hee is one of my favorite quiche recipes:

Country Style Chicken & Cheese Quiche

pastry crust for a 10" pie pan or fluted quiche pan
1/4 cup grated Parmesan cheese
1 cup finely diced cooked chicken
2 small green onions, with tops, finely chopped
3 eggs
1 cup cream
1/4 t. salt
1/4 t. dry mustard
1/8 t. pepper
1/4 cup sliced almonds
1/4 cup grated Parmesan cheese

Sprinkle the first 1/4 cup of Parmesan cheese in the crust that you have placed in the pie pan. Top with the chicken and green onions. Mix the eggs, cream, salt, mustard, and pepper in a bowl. Pour the custard over the chicken-onion mixture in the pie crust. Sprinkle top of quiche with the almonds and second quarter cup of the Parmesan cheese.

Bake at 425 for 10 minutes then reduce heat to 325 and continue baking for about 30 minutes or until custard is set. To test for doneness, insert a knife into the center of the pie. If it comes out almost clean, remove pie from the oven. It will set up in a few minutes while it cools. Cut in wedges and serve warm. Makes 6-8 servings.

Makes one quiche

1 Deep Dish Pie Crust (No Fail Pie Crust Recipe)

12 Large Chicken Eggs or 6 Duck Eggs

Heavy Cream

Big handful of Mexican Four Cheese Blend

1 Plumb Tomato sliced medium thickness

Diced Cooked Ham

Chopped Fresh Parsley

Sliced Fresh Mushrooms (partially cooked in microwave)

Pepper



Prepare a pie crust and set aside.

Heat oven to 370*F.

Whip eggs until fluffy. Add a splash of cream, enough to make the mixture creamy but not too much, just eyeball it. Beat until well mixed.

Pour into pie crust. Add other ingredients and arrange to your liking. (Seriously, this is cake work, don't stress it, just make it however it looks good to you.)

Sprinkle pepper to taste.

Bake at 370*F about 40 minutes or until egg mixture is firm and has puffed up.

Allow to cool slightly before plating.
