Are there any fish farmers here?

My fiancé and I are starting a new flock, and we're getting into gardening this year. I'd be happy with that alone, but I'd absolutely love to start a fish farm in the future. I'm a pescetarian, so fish is the only meat I eat. If we added a fish farm into the mix, I could probably produce 75% (or more) of my food. We would likely start with tilapia, but I'd like to do salmon as well. If anyone here has experience with this, I'd love to hear about it!
 
I know something about it. Alabama is too hot in summer for salmon. It will sometimes be too cold in winter for tilapia. Your best bet will be catfish or striped bass hybrids.. Do you have an inexpensive water source?
Water isn't super expensive where we are. Is 20°F really too cold for tilapia? That's about as cold as it gets here. Bass is too high in mercury for me to eat frequently. I believe some varieties of catfish are okay. I eat fish 5x a week, so it has to be something low in mercury.
