This banana bread recipe was slowly developed by me. Many recipes were too sweet, and for banana breads, too firm. This recipe it easy to make and contains no wheat.

You will need:
1. 1 banana (makes it easy to double)
2. 1 tablespoon of white sugar
3. 1 tablespoon of butter or margin
4. 1/4 tsp of baking soda and salt
5. Spices; cinnamon, ground nutmeg, and ground cloves (optional)
6. Some extra bananas for topping (optional)
7. 1 egg (you can also use the egg yolk, it makes it more compact, but adding the egg white is fine too. If you decide to add the egg yolk only, also add in a splash of milk).


COOKING INSTRUCTIONS:

1. Smash 1 banana and 1 tablespoon of melted butter
2. Add in the egg and whisk until combined (if you use only the yolk, add a splash of milk
3. Preheat your oven to 350
4. Whisk in baking soda, salt, and spices
5. Pour batter into containers, I like to use small custard containers. If you use small containers, bake for 35 minutes or until browned on the outside. If you use larger containers bake for about 1 hour or until you can stick a chopstick in the bread and lift out keeping a clean chopstick. I like to add bananas at the top when they have baked for about 20 minutes.
