Ingredients:


2 med. potatoes, thinly sliced
1 tbsp margarine, cut into pieces
1 pinch salt
1 pinch pepper
1/2 cup ham, chopped
1/2 cup broccoli florets, chopped (fresh or frozen)
(4-oz.) cubes sharp cheddar cheese
5 lg. eggs
2 tbsp milk or cream

Cooking Instructions


Using a 9" greased pie pan, place potatoes in a layer on the bottom of the pan, place pieces of margarine evenly over the top and add salt and pepper. Bake at 400° approximately 15 - 20 minutes till cooked and slightly browned. Remove and evenly sprinkle ham, broccoli and cheese over the top. Beat together the eggs and milk and pour over the top. Bake at 400° for 30 - 35 minutes till the center is set and the top is golden. Removed and allow to cool for 5 minutes. You can sprinkle a little more cheese over the top after removing from the oven if you like.

Note: You could substitute nearly any meat and vegetable you may prefer. Tuna, peas and a little dill is a good variation as is turkey, broccoli and Swiss cheese instead of cheddar. Serves 4.
