Spicy Asian Chicken Thighs

This is a recipe I came up with last night. It turned out amazing. The time seems long, but it does include chilling and resting times. Overall, a VERY easy recipe to make! Let me know what you guys think if you try it!

For a spicier version, reduce the amount of ketchup in sauce and replace with more Gochujang sauce.
For a milder or non-spicy version, skip the Gochujang sauce and just add more ketchup or sweet chili sauce.

Total Time: 1 hour 15 mins (includes chill & rest time)

INGREDIENTS​

  • 4 bone-in/skin-on chicken thighs
  • 1/3 cup ketchup
  • 3 Tbsp butter
  • 2-3 Tbsp Alicia Love You Long Time - Korean BBQ rub
  • 2 Tbsp Gochujang - Korean chili sauce
  • 2 Tbsp honey
  • 2 Tbsp La Choy sweet chili sauce
  • 1 Tbsp soy sauce
  • 2 tsp lime juice
  • 1/2 tsp sesame oil

PREPARATION​

1) Preheat oven to 375 degrees F.

2) Generously coat all sides of chicken thighs with Alicia Love You Long Time - Korean BBQ rub. Place on a plate. Cover with plastic wrap. Chill in fridge for at least 30 minutes.

3) In a medium mixing bowl combine: ketchup, gochujang, honey, soy sauce, sweet chili sauce, lime juice, and sesame oil. Set aside.

4) Heat a large skillet to med-hi. Melt butter. Sear chicken 3-4 mins on each side until skin is nicely browned and slightly crispy. Place on large baking sheet.

5) Generously baste sauce over each chicken thigh. Bake for 25-27 mins until cooked through. Internal temperature should be 165F. Let rest for 5 minutes. Serve with stir fry veggies, rice, or ramen noodles.
