I am looking for recipes that call for eggs, recipes that can help me use up an extra eggs we have around the house. I am curious to find out what recipes you all like to make when you have an abundance of eggs. Egg salad? Yellow cake? Angel food cake? Deviled eggs? Post your favorite recipes and help me put together an Everything Egg Cookbook!
My favorite recipe to get started is egg salad:
Better than Deli Egg Salad
Total Time: 30 minutes
Servings: 5-6
Ingredients:
12 eggs
1/3 cup onion finely chopped
One celery stalk peeled and finely chopped
2/3 cup mayonnaise
1/4 cup dijon mustard
1/2 tsp garlic powder
1/4 tsp dill weed
Toasted bread
Directions:
Put a mixing bowl in the freezer to chill. Boil eggs for 13 minutes. While eggs are boiling, chop onion and celery. Rinse eggs in cold water when done. Remove eggshells. Rinse eggs with ice cold water. Coarsely chop eggs. Add all ingredients and mix well. Serve on toasted bread.
