I am looking for recipes that call for eggs, recipes that can help me use up an extra eggs we have around the house. I am curious to find out what recipes you all like to make when you have an abundance of eggs. Egg salad? Yellow cake? Angel food cake? Deviled eggs? Post your favorite recipes and help me put together an Everything Egg Cookbook!

My favorite recipe to get started is egg salad:

Better than Deli Egg Salad

Total Time: 30 minutes
Servings: 5-6

Ingredients:
12 eggs
1/3 cup onion finely chopped
One celery stalk peeled and finely chopped
2/3 cup mayonnaise
1/4 cup dijon mustard
1/2 tsp garlic powder
1/4 tsp dill weed
Toasted bread

Directions:
Put a mixing bowl in the freezer to chill. Boil eggs for 13 minutes. While eggs are boiling, chop onion and celery. Rinse eggs in cold water when done. Remove eggshells. Rinse eggs with ice cold water. Coarsely chop eggs. Add all ingredients and mix well. Serve on toasted bread.

Mississippi Mud Brownies

1 c. margarine
5 1/2 Tbsp. cocoa
1 1/2 cups all purpose flour
2 cups sugar
4 eggs
1 tsp. vanilla
1 cup walnuts (optional)

Preheat oven to 350

In a medium saucepan, melt together margarine and cocoa. Cool Slightly. Mix 1 1/2 cups flour and sugar. Start beating and add the 4 eggs, one at a time, blending well after each egg, until dough is smooth as silk kinda like you would when you make fudge not that long but the batter will get really silky. Fold in vanilla and nuts. Bake at 350 for 30 mins. Do not over bake the brownies they can be slightly sticky to the touch. Cool completely. After they cool you can frost them if you like.

I double this recipe and put it in a 9x13 pan....I put powdered sugar on them when they are still warm. These are really dense but everyone I know loves them that eats them they are addicting.

Okay, found my egg recipe notebook! Here are a few of my favorites! :D Not recipes of my own creation, but I don't remember where I found most of them, so I unfortunately can't give credit. :/


Adams County Apple Bundt Cake

3 cups all-purpose flour
1 tablespoon baking powder
2 cups sugar
1 cup peanut oil
4 eggs
1/3 cup orange juice
1/2 teaspoon salt
2 1/2 teaspoons vanilla
- - -
4 medium apples, peeled and thinly sliced
2 teaspoons ground cinnamon
5 tablespoons sugar
Powdered sugar if desired


  • Preheat oven to 350. Grease Bundt pan.

  • Combine all ingredients above the dashes. Beat until thoroughly combined

  • In another bowl, toss apples in cinnamon and 5 tablespoons sugar.

  • Spread about 1/3 of the batter in the Bundt pan. Put about 1/2 of the apples on top.

  • Repeat above step, then cover with remaining batter.

  • Bake for 1 1/2 hours or until toothpick inserted at center comes out clean.

  • Cool 20 minutes, then remove from Bundt pan to wire rack. Dust with powdered sugar if desired.

I have also made a simple powdered sugar and milk glaze and drizzled over this cake. It's delicious either way! :drool





Orange Cream Cheese Pound Cake

1 1/2 cups butter, softened
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 eggs
3 cups flour
1/4 tablespoon salt
2 tablespoons orange extract
2 tablespoons orange peel, finely grated

Glaze:
2 cup powdered sugar
1/2 teaspoon orange peel, finely grated
4 tablespoons orange juice


  • Grease and flour Bundt pan or 2 bread pans.

  • With mixer, blend butter and cream cheese until smooth.

  • Mix in sugar, one cup at a time.

  • Mix in 2 eggs and 1 cup of flour, blending them in. Repeat until all eggs and flour is blended in.

  • Add salt, orange extract, and orange peel. Blend until well mixed.

  • Pour batter into greased pans and place into COLD oven. Preheat oven to 300.

  • Bake 2 hours or until toothpick comes out clean at the center.

  • While cakes are cooling, mix glaze ingredients until smooth. Once cakes are cooled, place it/them on a large plate or platter and coat with glaze. Cut and serve!


My mom's favorite for her birthday! :D





Potato Breakfast Casserole

1 pound shredded potatoes
1 pound desired meats (sausage links, ham, bacon, etc.), fully cooked
3 cups shredded cheddar
8 slightly beaten eggs
1/2 teaspoon ground pepper
1-2 cups other vegetables as desired


  • Preheat oven to 350. Butter 9x13 baking dish.

  • Mix pepper, eggs, potatoes, and cheese.

  • Mix in meat and veggies

  • Spread into baking dish and sprinkle with more cheese if desired.

  • Bake 40-45 minutes or until set


I did those mini sausage links in this and it turned out awesome!





No-Yeast Cinnamon Rolls

Dough:
2 cups flour (plus extra for rolling)
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter, room temp
3/4 cup milk
1 egg, beaten

Filling:
4 tablespoons butter, room temp
1 cup packed brown sugar
3 teaspoons ground cinnamon

Frosting:
2 ounces cream cheese
2/3 cup powdered sugar
2 tablespoons milk


  • Preheat oven to 400. Grease desired pans. (I used 9-inch cake pans.)

  • In small bowl, fork together filling ingredients until crumbly. Set aside.

  • In a large bowl, combine dry ingredients for dough. Blend butter into dry ingredients.

  • Add milk and egg. Stir to combine.

  • Roll dough out on floured surface into a rectangular shape.

  • Sprinkle filling evenly over dough, leaving about 1/2 inch border of bare dough.

  • Carefully roll from one long side of the rectangle to the other. Cut into 12 rolls.

  • Place rolls in greased pans (filling can fall out so be careful!). Bake 20-25 minutes.

  • While rolls are baking, combine frosting ingredients. Add more milk for a drizzle.

  • Cool rolls until still warm, spread frosting on rolls, and serve.

Only one egg, and I can never get these to stay together like the ones from the can, but they are SOOO good! :drool Seriously, double it, then you have an excuse to use 2 eggs instead of just 1. :lol:





Cake Mix Cookies

2 eggs
1/2 cup oil
1 box (18 oz) desired cake mix (If box size is smaller, just use a little less oil)


  • Preheat oven to 350.

  • Mix all ingredients in a large bowl.

  • Roll dough into balls and place on cookie sheet.

  • Bake for 4-10 minutes or until edges are firm. They will seem a bit doughy until cooled, so don't overbake them!

It's a guilty pleasure, what can I say? :oops: :lol: I've tried it with several cake mixes, but my favorites are Chocolate (obviously!) and Funfetti. :p






I have a lot more, but these are the ones that I've actually used and were well-received by the family, and they use multiple eggs (well, if you double the cinnamon roll recipe)! :D

These are amazing!!! Made them not long ago and they did not last long
 
Found a cookbook in the shape of an egg last weekend! Hoping it has some good recipes that use up lots of eggs!
